Lot G Café believes in participating in full-circle sustainability. Starting in the kitchen, all food scraps go into a special bin, destined to be picked up and turned into rich, fertile compost and distributed to local farmers by Happy Trash Can. All leftover food and even napkins from diners’ plates also go into the compost and the containers for takeout orders are 100% compostable and sourced from environmentally responsible companies. Cans, glass, plastic, and cardboard are always recycled. What all of this means is that at the end of the day, all that is left to put in the dumpster is one small bag of garbage – a reduction of over 70%. Of course, most important to a potential diner is what goes into the dishes a restaurant creates. At Lot G, ingredients are thoughtfully sourced by working wherever possible with local farmers, ranchers, and producers, and they are organic, sustainably harvested, and/or humanely raised wherever possible. Wheat sourced from Northern Montana is baked by sister restaurant Feed Café into bread. Pork, goat cheese and produce travel just a few miles from Amaltheia Farm to the restaurant, beef comes from locally based Yellowstone Grassfed Beef, and lake trout is sustainably harvested by Native Fish Keepers up North in Polson. Locally grown vegetables make appearances whenever available, coffee is roasted nearby and the kombucha is produced right next door by Dean’s Zesty Booch. Working with local farmers and ranchers to provide fresh produce, meats and eggs not only decreases the environmental impact of the miles driven to deliver a product to Bozeman, it also honors the local agriculture that has been a mainstay of our valley for over a hundred years. Best of all, it creates fresher, more delicious dishes. Executive chef Mike Henson scours the state for the best place has to offer and then dreams up creative ways to utilize these choice ingredients.
